5 min Blistered Pepper Medley and Onion
Delicious Blistered Pepper Medley and Onion in 5 minutes! This is a great side dish for 2 people. It is the most colorful when you use assorted mini peppers and shishito peppers. It is one of the best ways to taste the rainbow
When you cook the peppers, make sure all the peppers touch the pan for even cooking. Since this dish comes together so fast, it is perfect on a weeknight, or anytime you want to add to the feast. I often hold the peppers on the stem with my fingers to eat them. Blistered Pepper Medley and Onion is pleasing to the eyes and fun to eat!
Serves 2
Oil 2 Tbsp
Assorted Mini Peppers 8 oz
Onion (sliced) 1/2
Salt 1/2 tsp
Lemon Zest of 1/2 lemon
Coarse Sea Salt
In a pan over medium high heat, pour 2 Tbsp of oil, followed by the mini peppers. Make sure all the peppers touch the pan, add 1/4 tsp of salt. Cook without stirring for 2 minutes.
Sprinkle 1/4 tsp salt on the peppers, add the sliced onion and the lemon zest,, and stir to flip the peppers. Cook without stirring for another 2 minutes.
Plate the pepper medley and the onion. Finish with more lemon zest and a pinch of coarse sea salt. Enjoy!
